I wanted something different tonight so I made this recipe up for our Meat loaf. I am sure no one has it cause I did not see it in a book or on the internet just thought of the things I like that are good and put it together. Hope you agree it is moist, juicy and good tasting.

Ingredients

  • 1 lb
    ground beef
  • 1/2 lb
    i used jimmy deans sausage
  • 1/2 c
    diced bell pepper
  • 1/2 c
    diced sweet onion
  • 2
    egg
  • 3 clove
    fresh pressed garlic
  • 1 Tbsp
    salt
  • 2 tsp
    ground black pepper
  • 1 can(s)
    10oz. ro tel diced tomatoes and green chili
  • 1 can(s)
    8oz. tomatoe sauce
  • 1/2 c
    enchilada sauce
  • 1 c
    panko bread crumbs

How to Make Jamie's Meat Loaf

Step-by-Step

  1. In large mixing bowl mix together the ground beef and the sausage well.
  2. Make a well in the center. Beat the two egg and pour in the well.
  3. mix the ro tel, tomatoe sauce and enchilada sauce together and pour in.
  4. Add all the remaining ingredients and mix well. Bake in a deep baking dish or loaf pan. 1hr and 10 min or until done on 350 degrees in oven. At the end spoon some enchilada sauce on top and heat about 5 minutes longer.
