jalapeno pesto burger

This is a recipe I came up with when I had extra jalapeno's in the refrigerator and saw a jar of pesto also in refrig. so I thought I would make a different kind of pesto and what better to eat on than a burger. My husband loved it, so I will be cooking it again.

Ingredients

  • 5-6 - jalapenos, seeded and chopped
  • 1/4 cup pine nuts
  • 1 clove garlic
  • 1/4 cup parmesan cheese, grated
  • 2 cups fresh spinach and arugula mix
  • 1/4 cup italian parsley
  • 1/4 cup olive oil, extra virgin
  • 4 slices provolone cheese
  • 1 1/2 pounds ground beef
  • - salt and pepper to taste

How To Make jalapeno pesto burger

  • Step 1
    Combine ground beef, salt and pepper. Form into 4 patties. Cook in skillet or grill until desired doneness. While burgers are cooking, in food processor combine jalapenos, garlic, pine nuts, parmesan, spinach arugula mix and parsley. Turn on processor and drizzle in olive oil until well combined. Serve on Jalapeno Waffle Bread(recipe posted on this site). Spread both sides of bread with pesto, top with burger, provolone cheese and fresh spinach and arugula.
