This is a quick and easy lazy day meal to make.

Ingredients

  • 1 pound thin lean beef strips
  • 1/4 teaspoon black pepper
  • - non-stick cooking spray
  • 1 large yellow onion, halved, sliced
  • 1 medium green bell pepper, thinly sliced
  • 1 medium red bell pepper, thinly sliced
  • 8 ounces package of sliced mushrooms
  • 3/4 cup zesty italian salad dressing
  • 1 1/4 cups water
  • 1 cup minute rice (brown or white, your preference)
  • 6 - flour tortillas
  • - light sour cream (optional)

How To Make italian beef wraps

  • Step 1
    Season meat with pepper. Spray large non-stick skillet with non-stick cooking spray. Add meat; cook for 5 minutes or until cooked through. Remove meat from skillet; cover to keep warm.
  • Step 2
    Add onions, bell peppers, mushrooms, salad dressing and water to skillet. Bring to a boil. Stir in rice; cover.
  • Step 3
    Reduce heat to medium-low; simmer for 5 minutes. Remove from heat. Add meat mixture; stir. Let stand, covered, for 5 minutes. Spoon meat mixture evenly onto tortillas and top with sour cream, if desired. Roll up.
