italian beef roll ups

My family enjoys the Italian Beef I make in the crockpot. But I wanted to cut back on potatoes so I used tortillas and added a little cheese - always a fave with my guys!

Ingredients

  • 2-3 pounds beef roast
  • 1 medium onion, sliced
  • 3 ribs - celery, sliced
  • 1 cup carrots, sliced
  • 1 medium green pepper, sliced optional
  • 1 can tomatoes, diced
  • 1 can mushrooms 4 oz or use fresh
  • 1 tablespoon gsp (equal parts garlic, salt and pepper)
  • 1 tablespoon italian seasoning
  • 12 - tortillas, flour 10 inch
  • 1 cup cheddar and/or mozzerella cheese, shredded

How To Make italian beef roll ups

  • Step 1
    Sear beef roast on all sides in hot skillet
  • Step 2
    Layer onions, celery, carrots, mushrooms, and peppers (if used) in bottom of crock pot
  • Step 3
    Sprinkle with 1/2 the GSP and about 1/3 of the Italian seasoning
  • Step 4
    Lay beef roast on top of the vegetables
  • Step 5
    Pour tomatoes and juice on top of the roast, scooting the tomato pieces off of the top
  • Step 6
    Sprinkle with the remaining seasonings
  • Step 7
    with the lid on, cook on medium 6-8 hours until meat falls apart
  • Step 8
    Shred meat and stir to mix with veggies
  • Step 9
    remove the lid and continue to cook until most of the juices are cooked off
  • Step 10
    Serve on tortillas and top with cheese
