My family enjoys the Italian Beef I make in the crockpot. But I wanted to cut back on potatoes so I used tortillas and added a little cheese - always a fave with my guys!

Ingredients

  • 2-3 lb
    beef roast
  • 1 medium
    onion, sliced
  • 3 ribs
    celery, sliced
  • 1 c
    carrots, sliced
  • 1 medium
    green pepper, sliced optional
  • 1 can(s)
    tomatoes, diced
  • 1 can(s)
    mushrooms 4 oz or use fresh
  • 1 Tbsp
    gsp (equal parts garlic, salt and pepper)
  • 1 Tbsp
    italian seasoning
  • 12
    tortillas, flour 10 inch
  • 1 c
    cheddar and/or mozzerella cheese, shredded

How to Make Italian Beef Roll Ups

Step-by-Step

  1. Sear beef roast on all sides in hot skillet
  2. Layer onions, celery, carrots, mushrooms, and peppers (if used) in bottom of crock pot
  3. Sprinkle with 1/2 the GSP and about 1/3 of the Italian seasoning
  4. Lay beef roast on top of the vegetables
  5. Pour tomatoes and juice on top of the roast, scooting the tomato pieces off of the top
  6. Sprinkle with the remaining seasonings
  7. with the lid on, cook on medium 6-8 hours until meat falls apart
  8. Shred meat and stir to mix with veggies
  9. remove the lid and continue to cook until most of the juices are cooked off
  10. Serve on tortillas and top with cheese
