italian beef roll ups
My family enjoys the Italian Beef I make in the crockpot. But I wanted to cut back on potatoes so I used tortillas and added a little cheese - always a fave with my guys!

Ingredients
- 2-3 pounds beef roast
- 1 medium onion, sliced
- 3 ribs - celery, sliced
- 1 cup carrots, sliced
- 1 medium green pepper, sliced optional
- 1 can tomatoes, diced
- 1 can mushrooms 4 oz or use fresh
- 1 tablespoon gsp (equal parts garlic, salt and pepper)
- 1 tablespoon italian seasoning
- 12 - tortillas, flour 10 inch
- 1 cup cheddar and/or mozzerella cheese, shredded
How To Make italian beef roll ups

Step 1Sear beef roast on all sides in hot skillet

Step 2Layer onions, celery, carrots, mushrooms, and peppers (if used) in bottom of crock pot

Step 3Sprinkle with 1/2 the GSP and about 1/3 of the Italian seasoning

Step 4Lay beef roast on top of the vegetables

Step 5Pour tomatoes and juice on top of the roast, scooting the tomato pieces off of the top

Step 6Sprinkle with the remaining seasonings

Step 7with the lid on, cook on medium 6-8 hours until meat falls apart

Step 8Shred meat and stir to mix with veggies

Step 9remove the lid and continue to cook until most of the juices are cooked off

Step 10Serve on tortillas and top with cheese
