italian beef burritos
Just a little twist on the burrito. This one has a zesty Italian filling. I adapted this recipe from one found in our local paper.

Ingredients
- 2 pounds lean ground beef
- 2 medium onions, finely chopped
- 1 - red bell pepper, chopped
- 1 - green bell pepper, chopped
- 1 can kidney beans, drained
- 1 jar (26 to 28 ounces) ragu spaghetti sauce
- 1/2 teaspoon oregano
- 1/4 teaspoon dried red pepper flakes
- - salt and pepper to taste
- 10 - (10 inch) flour tortillas
- 3 cups shredded mozzarella cheese
- - sour cream
How To Make italian beef burritos

Step 1Brown beef in a large skillet. Stir in onions and bell pepper and cook for 5-7 minutes more until veggies are tender. Drain grease. Reserve about 1/4 cup spaghetti sauce for garnish. Stir in kidney beans, remaining spaghetti sauce, oregano, pepper flakes, and salt and pepper to taste. Heat through.

Step 2To serve: Warm tortillas. In center of each tortilla place 1/3 cup cheese and 1 cup of meat filling. Roll up and place on plate seam side down. If desired garnish with a tablespoon of sour cream and a little spaghetti sauce on each burrito.
