italian beef burritos

Just a little twist on the burrito. This one has a zesty Italian filling. I adapted this recipe from one found in our local paper.

Ingredients

  • 2 pounds lean ground beef
  • 2 medium onions, finely chopped
  • 1 - red bell pepper, chopped
  • 1 - green bell pepper, chopped
  • 1 can kidney beans, drained
  • 1 jar (26 to 28 ounces) ragu spaghetti sauce
  • 1/2 teaspoon oregano
  • 1/4 teaspoon dried red pepper flakes
  • - salt and pepper to taste
  • 10 - (10 inch) flour tortillas
  • 3 cups shredded mozzarella cheese
  • - sour cream

How To Make italian beef burritos

  • Step 1
    Brown beef in a large skillet. Stir in onions and bell pepper and cook for 5-7 minutes more until veggies are tender. Drain grease. Reserve about 1/4 cup spaghetti sauce for garnish. Stir in kidney beans, remaining spaghetti sauce, oregano, pepper flakes, and salt and pepper to taste. Heat through.
  • Step 2
    To serve: Warm tortillas. In center of each tortilla place 1/3 cup cheese and 1 cup of meat filling. Roll up and place on plate seam side down. If desired garnish with a tablespoon of sour cream and a little spaghetti sauce on each burrito.
