individual quick no bake enchiladas

Just stumbled upon this tonight as I was going to make fajitas and realized that I was out of flour tortillas. I also had some left over chili that I needed to use up. I really enjoyed these and will be making them again. They're quick and no need to heat the oven. Great when cooking for one or two people in a hurry.

Ingredients

  • 2 - corn tortillas
  • 1 teaspoon butter, melted or softened
  • 1 tablespoon olive oil to coat skillet
  • 2-4 tablespoons chili (i warmed leftover chili )
  • 2-4 tablespoons grated cheddar cheese
  • MAY ADD SAUTEED ONIONS, GRILLED STIR FRY BEEF STRIPS, OR COOKED GROUND BEEF. BEFORE SERVING, COVER WITH SMALL AMOUNT OF ADDITIONAL CHILI AND CHEESE (OPTIONAL)

How To Make individual quick no bake enchiladas

  • Step 1
    Heat chili (amount depending on how many you're making)
  • Heat skillet until hot
    Step 2
    Add olive oil to skillet and get hot. I used an iron skillet grill (or use plain iron skillet)
  • Buttered corn tortillas that have been heated to soften in skillet
    Step 3
    Lightly brush butter over 2 corn tortillas (on each side) and place in skillet just long enough to soften. Turning once.
  • Step 4
    Add 1-2 tbsp. heated chili ( or seasoned & cooked stir fry beef strips or cooked seasoned ground beef) and 1-2 tbsp. cheese on one side of each tortilla. Using spatula/fingers or large spoon roll each tortilla. Remove from skillet with spatula and serve.
  • Stovetop enchiladas with meat and cheese. Top with chili, if desired.
    Step 5
    May add any of the optional ingredients to your liking. Repeat process for additional servings.
