Like most people on this site I love home cooking...a lot of made from scratch, hard work, time consuming, and delicious recipes. However, I've had a secret that I've kept for many family and I really like instant potatoes. Some members of my extended family gasp at the thought, but I'm coming out of the closet today. With that said I wanted to share this recipe I threw together today in a pinch. It got a thumbs up from everyone in my family, so if you are short on time give this a shot.

1 lb
ground chuck
envelope of lipton's french onion soup
instant potato flakes, dry
1 can(s)
mixed vegetables
1/2 c


1Brown meat.
2Add soup and 1/2 cup water. Cook about 5 minutes.
3Add vegetables, cover and cook about 10 minutes or until vegetables are tender.
4Cook potatoes according to box directions using milk, butter, and salt. I made enough for 12 servings but could have done with little less.
5Layer in dish meat mixture first and topped with potatoes. (I used a 11 x 7 glass dish)
6You can eat as is or put in oven at 375 for 15 minutes just to brown top.
