Like most people on this site I love home cooking...a lot of made from scratch, hard work, time consuming, and delicious recipes. However, I've had a secret that I've kept for many years...my family and I really like instant potatoes. Some members of my extended family gasp at the thought, but I'm coming out of the closet today. With that said I wanted to share this recipe I threw together today in a pinch. It got a thumbs up from everyone in my family, so if you are short on time give this a shot.

Ingredients

  • 1 pound ground chuck
  • 1 - envelope of lipton's french onion soup
  • - instant potato flakes, dry
  • 1 can mixed vegetables
  • - milk
  • - butter
  • - salt
  • 1/2 cup water

How To Make incredibly easy shepherds pie

  • Step 1
    Brown meat.
  • Step 2
    Add soup and 1/2 cup water. Cook about 5 minutes.
  • Step 3
    Add vegetables, cover and cook about 10 minutes or until vegetables are tender.
  • Step 4
    Cook potatoes according to box directions using milk, butter, and salt. I made enough for 12 servings but could have done with little less.
  • Step 5
    Layer in dish meat mixture first and topped with potatoes. (I used a 11 x 7 glass dish)
  • Step 6
    You can eat as is or put in oven at 375 for 15 minutes just to brown top.
