This recipe came from ideas from other people. I read a recipe( I think here on JAP) about adding water to beef because it helps retain moisture. Then on one of the cooking shows, I saw the trick of making the "hollow" in the burger so it doesn't end up " football shaped". I always liked a burger on the grill, but these are like being cooked on a flat top. Gets that nice crust to seal in the juices! The first time I made these, my husband said, and I quote " I want you to make these, like this, every time! Best burger I've eaten!

Heat skillet to the high end of medium(7). Place burgers into skillet for 3 1/2 min per side( for medium doneness) Do not move at all while cooking!

Remove to the other skillet & top with cheese. cover. ( I cook them in batches of 2, that way, the first batch is ready to plate, when I'm putting the 2nd batch into warm skillet & starting the 3rd to cook.))
