Hubby's Favorite Burgers

This recipe came from ideas from other people. I read a recipe( I think here on JAP) about adding water to beef because it helps retain moisture. Then on one of the cooking shows, I saw the trick of making the "hollow" in the burger so it doesn't end up " football shaped". I always liked a burger on the grill, but these are like being cooked on a flat top. Gets that nice crust to seal in the juices!
The first time I made these, my husband said, and I quote " I want you to make these, like this, every time! Best burger I've eaten!

How to Make Hubby's Favorite Burgers

Step-by-Step

  1. You will need 2 skillets for these.
Put one on back burner on low. Set aside the lid.
  2. Separate beef into 6 portions.
  3. With faucet running, pull open handful of meat , run under water stream quickly & press back together.
Flatten with palm & create a dip in center of patty. (handling the meat as little as possible.)Season with salt & pepper.( or whatever you like)
  4. Heat skillet to the high end of medium(7). Place burgers into skillet for 3 1/2 min per side( for medium doneness) Do not move at all while cooking!
  5. Remove to the other skillet & top with cheese. cover.
( I cook them in batches of 2, that way, the first batch is ready to plate, when I'm putting the 2nd batch into warm skillet & starting the 3rd to cook.))
