    baking soda
  • 3 Tbsp
  • 2 tsp
    each vegetable oil, oyster sauce, cornstarch & shaoxing wine

    Slice the beef against the grain and place in a bowl. Add the baking soda and water. Mix well with hands until the water is absorbed. Let sit 1 to 2 hours.

    Rinse the beef thoroughly under running cold water until water runs clear.
