hot tamales for a crowd

Tamales can be made ahead of time and cooked just before serving. SERVE HOT with a salad or soup. ENJOY!!!!

Ingredients

  • 3 pounds ground beef, ( pre packaged is best )
  • 2 tablespoons garlic powder
  • 3 tablespoons red pepper ( cayenne ) ( 1 tbsp, not so hot )
  • 1/2 tablespoon black pepper
  • 3 tablespoons salt
  • 1/2 cup cornmeal
  • 2 ounces bottle chili powder
  • 1 small can tomato sauce
  • 3 medium onions
  • 1/2 cup water
  • 3 tablespoons cumin powder
  • 2 packages hot tamale parchment papper or corn husk
  • 1 small can tomato paste
  • 1 ounce chili powder

How To Make hot tamales for a crowd

  • Step 1
    Put onions, 1/2 cup water, and tomato sauce in a blender-puree. Put all ingredients, except for cornmeal in a roasting pan and mix well by hand.
  • Step 2
    Roll in a oblong ball, roll in cornmeal, then wrap in papers. ( Wet papers or corn husk so they wont be so stiff.) Put all tamales in a roasting pan; layer in opposite directions.
  • Step 3
    Put 1 small can tomato paste, 1 ounce chili powder in hot boiling water to dissolve and then pour over hot tamales to completely cover.
  • Step 4
    Simmer 2 hours with cover on. You might want to place something heavy over tamales to keep them from unfolding.
