homemade meatloaf

This recipe is part Paula Deen,and Brooke Deen(her daughter in law)I tweeked it a bit...I omitted a few ingredients to the meatloaf, and to me the glaze is better.Hope you like it!

Ingredients

  • - 1 pound ground beef
  • - 1 1/4 teaspoons salt
  • - 1/4 teaspoon ground black pepper
  • - 1 pkg.onion soup mix
  • - 1 - 2 eggs, lightly beaten
  • - 8 oz can rotel (not hot)
  • - 1/2 cup plain breadcrumbs
  • - 3 tablespoons ketchup
  • - glaze:
  • - 1/3 cup ketchup
  • - 2 tablespoons brown sugar
  • - 1 tablespoon dijon

How To Make homemade meatloaf

  • Step 1
    Mix all meatloaf ingredients well and place in a baking dish;Shape into a loaf.Mix ingredients for topping.Bake for 30 mins. Spread some of the glaze on the meatloaf and bake another 30 mins.Remove from the oven and let stand for about 5 mins.Then brush the rest of the glaze over the meatloaf before serving.For best results I cover the meatloaf before I put it in the oven,so it doesnt dry.
