homemade meatloaf
This recipe is part Paula Deen,and Brooke Deen(her daughter in law)I tweeked it a bit...I omitted a few ingredients to the meatloaf, and to me the glaze is better.Hope you like it!

Ingredients
- - 1 pound ground beef
- - 1 1/4 teaspoons salt
- - 1/4 teaspoon ground black pepper
- - 1 pkg.onion soup mix
- - 1 - 2 eggs, lightly beaten
- - 8 oz can rotel (not hot)
- - 1/2 cup plain breadcrumbs
- - 3 tablespoons ketchup
- - glaze:
- - 1/3 cup ketchup
- - 2 tablespoons brown sugar
- - 1 tablespoon dijon
How To Make homemade meatloaf

Step 1Mix all meatloaf ingredients well and place in a baking dish;Shape into a loaf.Mix ingredients for topping.Bake for 30 mins. Spread some of the glaze on the meatloaf and bake another 30 mins.Remove from the oven and let stand for about 5 mins.Then brush the rest of the glaze over the meatloaf before serving.For best results I cover the meatloaf before I put it in the oven,so it doesnt dry.
