Ingredients

  • 10 ounces frozen spinach, thawed
  • 1 1/2 tablespoons butter
  • 1 teaspoon oil
  • 1/3 cup onion, finely chopped
  • 1 - shallot, large
  • 1 clove garlic
  • 1 pound ground beef
  • 1/2 pound ground veal
  • 1/4 pound pork sausage
  • 1/4 teaspoon allspice
  • 1/4 teaspoon mace
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon madeira
  • 2 - eggs, beaten
  • - hot pepper sauce to taste
  • 3/4 cup bread crumbs
  • 2 teaspoons dijon mustard
  • 1 teaspoon chili sauce
  • 1/4 teaspoon oregano
  • 1/2 pound grated mozzarella cheese

How To Make herbed spinach loaf

  • Step 1
    Cook spinach in butter and drain
  • Step 2
    Saute onions, shallot and garlic in oil
  • Step 3
    Add spinach. Cook until water evaporates.
  • Step 4
    Combine rest of ingredients and bake 1 hour (glaze often)
  • Step 5
    Last 15 minutes top with cheese.
