Ingredients
- 5-6 pounds eye of round roast
- 1/2 cup flour
- 3 teaspoons salt
- 1 teaspoon paprika
- 1 teaspoon basil
- 1 teaspoon marjoram
- 1 - watercress, sprigs for garnish
How To Make herbed beef roast

Step 1Place roast on a sheet of waxed paper.

Step 2Mix remaining ingredients, except watercress.

Step 3Pat well into roast.

Step 4Place on a rack in a shallow baking pan.

Step 5Do not add water or cover pan.

Step 6Roast in slow oven (325) for 2 1/4 hours, or if using a meat thermometer, until thermometer registers 140 for rare.

Step 7Cover pan loosely with a sheet of foil, and let stand at room temperature until serving time.

Step 8Place on platter and garnish with watercress.

Step 9Serve with Mustard Cream.

Step 10*MUSTARD CREAM* 1 cup mayonnaise 1/2 cup prepared mustard 1/2 cup condensed beef consomme\' 1/4 cup cream

Step 11Combine all ingredients in a bowl.

Step 12Beat with electric mixer until well blended.

Step 13Chill.

Step 14Makes 2 cups.
