Ingredients

5-6 lb
eye of round roast
1/2 c
flour
3 tsp
salt
1 tsp
paprika
1 tsp
basil
1 tsp
marjoram
1
watercress, sprigs for garnish

Step-By-Step

1Place roast on a sheet of waxed paper.
2Mix remaining ingredients, except watercress.
3Pat well into roast.
4Place on a rack in a shallow baking pan.
5Do not add water or cover pan.
6Roast in slow oven (325) for 2 1/4 hours, or if using a meat thermometer, until thermometer registers 140 for rare.
7Cover pan loosely with a sheet of foil, and let stand at room temperature until serving time.
8Place on platter and garnish with watercress.
9Serve with Mustard Cream.
10*MUSTARD CREAM* 1 cup mayonnaise 1/2 cup prepared mustard 1/2 cup condensed beef consomme' 1/4 cup cream
11Combine all ingredients in a bowl.
12Beat with electric mixer until well blended.
13Chill.
14Makes 2 cups.
