Ingredients

  • 5-6 lb
    eye of round roast
  • 1/2 c
    flour
  • 3 tsp
    salt
  • 1 tsp
    paprika
  • 1 tsp
    basil
  • 1 tsp
    marjoram
  • 1
    watercress, sprigs for garnish

How to Make Herbed Beef Roast

Step-by-Step

  1. Place roast on a sheet of waxed paper.
  2. Mix remaining ingredients, except watercress.
  3. Pat well into roast.
  4. Place on a rack in a shallow baking pan.
  5. Do not add water or cover pan.
  6. Roast in slow oven (325) for 2 1/4 hours, or if using a meat thermometer, until thermometer registers 140 for rare.
  7. Cover pan loosely with a sheet of foil, and let stand at room temperature until serving time.
  8. Place on platter and garnish with watercress.
  9. Serve with Mustard Cream.
  10. *MUSTARD CREAM* 1 cup mayonnaise 1/2 cup prepared mustard 1/2 cup condensed beef consomme' 1/4 cup cream
  11. Combine all ingredients in a bowl.
  12. Beat with electric mixer until well blended.
  13. Chill.
  14. Makes 2 cups.
