hash with eggs using leftover beef
Best hash I have ever created! During this time of pandemic, money and groceries are tight. I created this to use up leftover beef from the day before's dinner for breakfast so nothing would be waisted. It surpassed my expectations!

Ingredients
- 2 cups leftover cooked beef, shredded or chopped
- 1 tablespoon vegetable oil
- 4 medium potatoes, peeled and cubed
- 1/2 medium onion, chopped
- 1/2 - green bell pepper, chopped
- 1/2 - red bell pepper, chopped
- 3/4 cup broth, stock, or au ju
- 1 tablespoon dried minced garlic
- salt and pepper to taste
- 6-8 large eggs
How To Make hash with eggs using leftover beef

Step 1Sat and pepper the potatoes. In a large, deep skillet add oil. Turn on to medium heat. Once hot, not smoking, add potatoes in an even layer and let brown for about 5 minutes without stirring.

Step 2Stir well. Add peppers, onion, dried minced garlic, and beef and stir well. Let cook for about 4 minutes.

Step 3Add the stock (or broth or Au Ju). Bring to a simmer, cover, turn heat down to medium-low. Let cook for about 8 minutes, stirring occasionally. Check it to see if potatoes are tender. Once potatoes are tender crack eggs on top. Sprinkle with salt and pepper to taste.

Step 4Cover and let cook on medium-low until eggs are done to your liking. I did about 8 minutes for almost all the way cooked through.

Step 5Remove from heat. Enjoy immediately!
