hanky waving meatloaf
I always hated meatloaf and avoided it. Then I had the idea to make one to suit my taste. Now it's one of my favorite dishes. The flavor comes from the sauce which is based on my grandmother's chili sauce recipe. It's spicy, sweet and full of flavor! If you're ready for a meatloaf that's not your mother's meatloaf give this one a try.

Ingredients
- SAUCE
- 2 cans 15 oz size diced tomatoes
- 1 - large onion, chopped
- 1 cup sugar
- 3/4 cup apple cider vinegar
- 3 teaspoons cinnamon, ground
- 1 teaspoon ginger powder
- 2 teaspoons cayenne pepper (more or less depending on the heat you like)
- 1 teaspoon salt
- MEATLOAF
- 2 pounds ground beef
- 1/2 cup onion, chopped
- 1/2 cup celery, chopped
- 1 cup stale bread crumbs, soaked in milk (drain excess milk before using)
- 2 - eggs
- 1/2 teaspoon greek seasoning
- 3/4 cup sauce from recipe included here
- - salt and pepper
How To Make hanky waving meatloaf

Step 1SAUCE

Step 2Mix together the dry ingredients for the sauce in a saucepan.

Step 3Add the rest of the ingredients and bring to a boil.

Step 4Cook over medium heat until it is reduced by half and thickened. Stir frequently.

Step 5Remove from heat to cool slightly. If too hot when added to the meat it will cook the meat in places.

Step 6TO MAKE THE MEATLOAF

Step 7Preheat oven to 350

Step 8Mix together all of the ingredients and place in a loaf or meatloaf pan. I try to keep the top flat and even a little higher on the sides to contain the sauce that's placed on top.

Step 9Generously top the meatloaf with the sauce. If you can resist putting it all on, reserve a little to serve on the side.

Step 10Bake until it reaches 165 degrees in the middle. About an hour but this varies based on how thick it is.
