    ground chuck
  • 20 oz
    can tomatoes
  • 1 c
    chopped onion
  • 1 small
    bay leaf
  • 1 large
    garlic clove, chopped
  • 1/2 tsp
    dried thyme
  • 1.5 qt
    water
  • 1/4 tsp
    dried basil
  • 1 c
    potatoes, cubed
  • 1 Tbsp
    salt
  • 1 c
    carrots, sliced
  • 1/8 tsp
    pepper
  • 1 c
    celery, diced
  • 1/4 c
    rice, uncooked
  • 1 c
    cabbage, shredded
  • 1
    grated parmesan cheese

How to Make Hamburger Minestrone Soup

Step-by-Step

  1. In a large kettle, cook beef with onion and garlic until slightly brown.
  2. Add water, potatoes, carrots, celery, cabbage and tomatoes; bring mixture to a boil.
  3. Add bay leaf, thyme, basil, salt and pepper; stir.
  4. Sprinkle rice on top.
  5. Reduce heat, cover and simmer one hour.
  6. Remove bay leaf.
  7. Sprinkle with parmesan cheese and serve.
