Found a similar recipe on the internet and tweaked it. Made it the first time tonight for dinner - was a big hit as there were no leftovers!

We love a simple and hearty meal. This ground beef and potato casserole is one of those meals. The potatoes bake into the creamy sauce and the onions add some flavor. Ground beef is not only a budget-friendly choice, but it also adds heartiness to the casserole. We used green beans, but any veggie would work. On top is a ton of gooey cheese. A quick and budget-friendly weeknight meal.

Ingredients
- 2 pounds ground beef
- 1 small onion, diced
- 4 medium potatoes, bakers
- 2 cans cream of mushroom soup (10.5 oz each)
- 1 cup sour cream
- 1 cup milk
- 2 cups cheddar cheese, shredded
- - salt and pepper, to taste
- 1 cup peas or green beans (optional)

Depending on the thickness of the potatoes, you may have to bake the casserole a bit longer.

Step 1Brown ground beef and onion, drain fat. Season with salt and pepper to taste.

Step 2Slice potatoes very thin (I use a mandolin).

Step 3Mix soup, sour cream, and milk.

Step 4In a 13x9 casserole, place a layer of potato. Top with a layer of ground beef and onion. Add 1/2 cup veggie, if desired.

Step 5Pour on half the sauce.

Step 6Top with 1 cup of cheddar cheese. Repeat the layers.

Step 7Cover with foil and bake at 350 for 1 hour. Remove foil and bake for another 10 minutes or until cheese is golden brown.
