ground beef casserole with cornmeal dumplings

Yesterday was one of those days I just didn't know what I wanted to fix for dinner. The following recipe is what I came up with. Hubby liked it, I found it to be too sweet from the creamed corn. He said to post it so it's posted!

Ingredients

  • 1 pound lean ground beef
  • 2 cans creamed corn
  • 4 medium potatoes, diced
  • 1 cup milk. add more if needed
  • 1 medium sweet onion, chopped
  • - salt & pepper to taste
  • CORNMEAL DUMPLINGS
  • 1 cup cornmeal
  • 1/2 cup all purpose flour
  • 1 - egg
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 tablespoon minced onions

How To Make ground beef casserole with cornmeal dumplings

  • Step 1
    Boil diced potatoes till not quite fork tender. While the potatoes are cooking, cook the chopped onions in a large skillet. Add ground beef, cook till no longer pink.
  • Step 2
    Add 2 cans of creamed corn to the skillet. Drain the potatoes, add into the skillet and simmer. I added about 1 cup of milk to the mix, you may add more or less as it depends on how thin or thick you want it.
  • Step 3
    Mix all the ingredients for the dumplings in a large bowl adding milk to make a stiff dough.
  • Step 4
    Bring the mixture in the skillet to a boil. Drop the dough by rounded teaspoons onto the ground beef mixture. Turn down to med high heat, cover & cook for 15 minutes.
