Ingredients
- 1 pound lean ground beef or turkey
- 1 box (6 oz. size) spanish rice mix
- 1/2 cup chopped onion
- 14 ounces can petite cut tomatoes, undrained
- 1 1/4 cups beef broth
- 8 ounces can whole kernel corn, undrained
- 1/2 cup green bell pepper, diced
- 1/2 cup cheddar cheese, shredded (or 3 slices of american cheese)
- 1 cup crushed corn chips, optional
How To Make ground beef and spanish rice hash

Step 1In a large skillet with 1 Tablespoon of vegetable oil, cook and scramble beef until no longer pink. Drain any grease. Stir in the rice mix,chopped onion,tomatoes, beef broth, corn and bell pepper and the seasoning packet from the rice; cook and bring mixture to a boil.

Step 2Pour mixture into a sprayed or greased casserole dish, cover with foil and bake at 350^ for 25 minutes; until rice is tender. Remove foil and sprinkle top with cheese and crushed corn chips, bake for 10 minutes more ,uncovered or until cheese melts. (American cheese slices may be used instead of shredded cheese ,if desired.
