I picked up this cool little grocery store cooking magazine (Coca-Cola Cool recipes), thinking that it would show me how to use my favorite beverage in cooking. It did NOT, but every recipe I've tried has been awesome, including this one!

Ingredients For grilled meatloaf

  • 1 1/2 lb
    ground beef
  • 1/2 c
    seasoned dry breadcrumbs
  • 2/3 c
    chili sauce, divided
  • 1/3 c
    grated onion
  • 1
    egg
  • 1/2 tsp
    pepper
  • 1/4 tsp
    salt
  • 2 Tbsp
    packed light brown sugar
  • 1 Tbsp
    spicy brown or dijon mustard

How To Make grilled meatloaf

    Prepare grill for direct cooking. Combine beef, bread crumbs, 1/3 cup chili sauce, onion, egg, pepper, and salt in large bowl; mix well. On cutting board or cookie sheet, shape mixture into 9" x 5" oval loaf, 1-½" thick.

    Combine remaining 1/3 cup chili sauce, sugar, and mustard in small bowl; mix well. Set aside. Place meatloaf on grid. Grill meatloaf, on covered grill, over medium-hot coals 10 minutes. Carefully turn meatloaf over using 2 large spatulas.

    Brush chili sauce mixture over top of meatloaf. Continue to grill, covered, 10 to 12 minutes for medium-well or until desired doneness is reached. (If desired, insert instant-read thermometer into center of thickest part of meatloaf. Thermometer should register 160*F for medium-well.) Let stand 10 minutes before slicing.
