I just love the flavor of fresh chili peppers and I love chili rellenoes. This is something I put together using both items in an easy-to-eat item. I have also roasted the chilis and peeled them before stuffing them and putting them in the burrito. But the fresh chili gives it a different texture and flavor. Enjoy.

Ingredients

  • 1 lb
    ground chuck
  • 1 tsp
    minced garlic
  • 2 Tbsp
    chopped onion
  • 1/2 tsp
    chili powder
  • 1 tsp
    cumin
  • 1 tsp
    coriander
  • ·
    salt and pepper to taste
  • 1 c
    shredded, cheddar or mexican blend cheese
  • 4 to 6
    long green chili peppers
  • 4 to 6
    burrito size flour tortillas, warmed

How to Make Green Chili Burrito

Step-by-Step

  1. Crumble ground chuck into a large skillet heated to medium low.
  2. Add garlic, chopped onion, chili powder, cumin, coriander, salt and pepper and cook the meat until done. Stir occasionally so the meat won’t burn.
  3. Drain the liquid from the meat mixture.
  4. Add cheese and mix well until cheese is melted.
  5. Cut the stem end from each chili pepper and remove the seeds and membranes.
  6. Fill each pepper with the meat mixture.
  7. Wrap each meat-filled pepper in a warm flour tortilla, burrito style.
  8. Great served with your favorite salsa.
