green chili burrito

I just love the flavor of fresh chili peppers and I love chili rellenoes. This is something I put together using both items in an easy-to-eat item. I have also roasted the chilis and peeled them before stuffing them and putting them in the burrito. But the fresh chili gives it a different texture and flavor. Enjoy.

Ingredients
- 1 pound ground chuck
- 1 teaspoon minced garlic
- 2 tablespoons chopped onion
- 1/2 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon coriander
- - salt and pepper to taste
- 1 cup shredded, cheddar or mexican blend cheese
- 4 to 6 - long green chili peppers
- 4 to 6 - burrito size flour tortillas, warmed
How To Make green chili burrito

Step 1Crumble ground chuck into a large skillet heated to medium low.

Step 2Add garlic, chopped onion, chili powder, cumin, coriander, salt and pepper and cook the meat until done. Stir occasionally so the meat won’t burn.

Step 3Drain the liquid from the meat mixture.

Step 4Add cheese and mix well until cheese is melted.

Step 5Cut the stem end from each chili pepper and remove the seeds and membranes.

Step 6Fill each pepper with the meat mixture.

Step 7Wrap each meat-filled pepper in a warm flour tortilla, burrito style.

Step 8Great served with your favorite salsa.
