As kids we were very pickey about what we ate and veggies were not on the top of our list! But I was a mashed potato nut so my grandma came up with this yummy and creative recipe to get us to eat zucchini! I loved and so do my kids!!!

Ingredients

  • 1 lb
    hamburger meat
  • 1/2
    red onion
  • 2 clove
    garlic
  • 1-2 medium
    zucchini
  • 1 stick
    celery
  • 1 stick
    carrot
  • 1 can(s)
    tomato sauce
  • 1 can(s)
    diced tomato

How to Make Grandma's Veggie Surprise

Step-by-Step

  1. mince garlic and dice up the red onion, then put in pan with hamburger meat and cook till meat is not pink. while meat is cooking dice zucchini, celery,and carrots. drain the hamburger meat and put back in pan. add the rest of the diced veggies and put the cans of tomato sauce and diced tomatoes in the pan with the meat. Season with salt and peper to taste. Let simmer on medium low heat for at least 45mins.
  2. Make mashed potatoes and serve verggie surprise over the mashed potates and enjoy!
