I am not sure why this called Goulash as it is nothing like the Hungarian Goulash that we also ate when I was a child. My mom would make this a couple of times a month for her 7 kids. I am sure that is was cheaper than the Hungarian Goulash, but was well loved and to this day is enjoyed by my family and friends that eat home style meals with us.

Ingredients

  • 1 pound box elbow macaroni, cooked and drained
  • 1 1/2 pounds lean ground beef
  • 1 - onion, chopped
  • 1 - bell pepper, chopped
  • 2 quarts tomatoes (i prefer home canned)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon dried parsley
  • 1 teaspoon granulated garlic
  • 1 pound cheddar cheese, shredded

How To Make goulash

  • Step 1
    Cook and drain macaroni and set aside. Brown ground meat with onions and peppers. Drain off grease.
  • Step 2
    Add tomatoes and seasonings. Add to macaroni in a large ovenproof casserole dish. Stir in cheese and bake for 30 minutes at 350-degrees.
  • Step 3
    Serve with a nice salad and a good crusty bread to sop up the juices. If there is leftovers they are good re-heated in a frying pan with a little water.
