this is a recipe that my executive chef showed me how to make, and ive tweaked it some to provide a excellent meatloaf with tons and moisture and flavor

Ingredients For good ol fashion meatloaf

2 lbground beef
-
1red bell pepper
-
1green bell pepper
-
1/2yellow onion
-
1 1/2 cjapanese bread cumbs(panko)

2eggs
-
3 Tbspmontreal steak seasoning

2 Tbspgarlic powder
-
2 cmarinara sauce
How To Make good ol fashion meatloaf

1Preheat oven to 375 degrees, grease a 13 x 9 glass Pyrex dish set aside

2Finely dice or mince(i use a food processor after i gut the pepper and take the core out of the onion)the onion and the red and green bell pepper to the point of where it is almost a puree, but you still want good small chunks of vegetable(less than 1/8 in size) whip your eggs into liquid form(scramble form)

3grab a mixing bowl and add your beef and everything on your list with the exception of the marinara sauce(that's for the last 15 minutes of cooking)and slowly mix everything thoroughly in the bowl until it is evenly distributed in the meat

4put the beef mixture in the 13 x 9 pan and and mash the meat and smooth out any cracks and get all the air out of the meat mixture that you may have caused by folding and mixing all the ingredients together, then bring the meat all back together and form into a traditional looking meatloaf in the center of the pan. Cover with aluminum foil

5bake at 375 degrees for 30 to 35 minutes or until it temps at 155, remove foil and add marinara sauce(ketchup will work but the marinara sauce makes the flavor really pop) to top off meatloaf and spread evenly and put back in oven for 10 to 15 minutes or 165 degrees, the marinara will be a bit darker and have some slight browning on edges and such

6let cool for just a minute and slice about an 1 inch to 1 1/2 inches thick and serve with your favorite sides
