Ingredients
- 2.5 pounds beef brisket
- 2 tablespoons cooking fat
- 2 small whole onions, studded with a few cloves
- 1 cup brown sugar, packed
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 quart boiling water
- 1 can yams, drained, 29 ounces
- 6 carrots, pared and slivered
- 2 medium tart apples, sliced
- 3 large potatoes, pared, halved
- 1/2 cup sugar
- 1/4 cup ketchup
- 1 tablespoon corn starch
- 1/2 tablespoon dry mustard
- 1 can mandarin oranges, 11 ounces

Step 1Trim excess fat from beef brisket and brown on both sides in fat in dutch oven.

Step 2Pour off drippings.

Step 3Add onions, 1/4 cup brown sugar, salt and pepper.

Step 4Stir in boiling water.

Step 5Cover and bake in moderate oven (350 degrees) for 2 hours.

Step 6Add yams, carrots, apples, white potatoes and 1/4 cup brown sugar; continue cooking, covered, 30 minutes.

Step 7Remove cloves from onions.

Step 8Combine sugar, 1/2 cup brown sugar, ketchup, cornstarch and mustard in small saucepan.

Step 9Drain mandarin oranges reserving liquid.

Step 10Stir liquid into sugar mixture and cook over medium heat until sauce boils.

Step 11Add mandarin oranges.

Step 12Spoon about half of the sauce over meat.

Step 13Continue cooking, uncovered, about 30 minutes or until meat is very tender, basting with sauce occasionally.

Step 14Carve meat diagonally across the grain and place on platter with vegetables.

Step 15Spoon remaining hot sauce over meat and vegetables.

Step 16Garnish with parsley flakes or fresh parsley.

Step 17NOTE: Brisket also can be simmered on top of range until tender or can be cooked in a pressure cookier according to manufacturer\'s directions.
