I was getting my hair cut and my hairdresser and I were discussing recipes. He started describing this corned beef recipe, and I tried to remember it the best I could. Turned out to be great!

Ingredients

  • 3 pounds corned beef brisket
  • 4 cups water
  • 1/2 cup coarse grain mustard
  • 2 cups currant jelly
  • 1/2 cup ruby port or other sweet red wine
  • 1/2 cup shallots,chopped
  • 1 1/2 tablespoons lemon zest
  • 1/4 cup fresh lemon juice
  • 1 tablespoon orange zest
  • 1 tablespoon dry mustard
  • 1 1/2 teaspoons ground ginger
  • 1 1/2 teaspoons pepper
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar, firmly packed

How To Make glazed corn beef

  • Step 1
    Place the brisket in a large Dutch oven. Add the water and bring to a boil. Cover, reduce heat, and simmer for 2 1/2 hours.
  • Step 2
    Drain the brisket. Place the brisket in a 8 inch square baking dish. Spread the mustard over the brisket and set aside.
  • Step 3
    Combine the jelly and the next 9 ingredients in a medium saucepan; stir well. Cook over medium-low heat until the jelly melts, stirring constantly. Pour the jelly mixture over the brisket. Sprinkle with the brown sugar.
  • Step 4
    Bake, uncovered, at 350º for 45 minutes, basting occasionally with the pan juices. Transfer the brisket to a serving platter and enjoy!
