I was getting my hair cut and my hairdresser and I were discussing recipes. He started describing this corned beef recipe, and I tried to remember it the best I could. Turned out to be great!

Ingredients
- 3 pounds corned beef brisket
- 4 cups water
- 1/2 cup coarse grain mustard
- 2 cups currant jelly
- 1/2 cup ruby port or other sweet red wine
- 1/2 cup shallots,chopped
- 1 1/2 tablespoons lemon zest
- 1/4 cup fresh lemon juice
- 1 tablespoon orange zest
- 1 tablespoon dry mustard
- 1 1/2 teaspoons ground ginger
- 1 1/2 teaspoons pepper
- 1/2 teaspoon salt
- 1/2 cup brown sugar, firmly packed
How To Make glazed corn beef

Step 1Place the brisket in a large Dutch oven. Add the water and bring to a boil. Cover, reduce heat, and simmer for 2 1/2 hours.

Step 2Drain the brisket. Place the brisket in a 8 inch square baking dish. Spread the mustard over the brisket and set aside.

Step 3Combine the jelly and the next 9 ingredients in a medium saucepan; stir well. Cook over medium-low heat until the jelly melts, stirring constantly. Pour the jelly mixture over the brisket. Sprinkle with the brown sugar.

Step 4Bake, uncovered, at 350º for 45 minutes, basting occasionally with the pan juices. Transfer the brisket to a serving platter and enjoy!
