Mom used to make this with leftover mashed potatoes. Now I use Idahoan Instant Potatoes. I like them a lot and it makes this recipe easier.

Ingredients
- 1 large egg
- 1/3 cup quick oats
- 1/3 cup catsup
- 1/2 teaspoon each salt and pepper
- 1 1/2 pounds lean ground beef
- 4 - servings warm mashed potatoes, prepared
- 1/2 cup shredded cheddar cheese (or more if preferred)
How To Make frosted meatloaf

Step 1Preheat oven to 350 degrees. In a large bowl beat egg slightly. Add oats, catsup, salt and pepper and mix well. Mix in ground beef. Shape into a loaf and place in an 8 by 4 inch loaf pan. Bake for 1 hour and 15 minutes.

Step 2Prepare mashed potatoes while meatloaf is baking. Add a bit more liquid than called for usually so potatoes will spread easily. Remove meatloaf from oven, cool a bit. Remove from pan and drain. Place on a large oven proof pie plate or serving plate. "Frost" or cover meatloaf on sides and top with mashed potatoes. Bake for 15 minutes more. Sprinkle cheese on top and return to hot oven until cheese is melted. Slice and serve.
