ground round
1 Tbsp
egg, beaten
1 Tbsp
onion, grated
1/4 tsp
garlic, minced
1/4 tsp
1/4 tsp
2 Tbsp
dry red wine
1.25 c
beef broth
salt to taste
pepper to taste

How to Make French Meatball Soup


  • 1Stove Top: Add rice to 1 cup water.
  • 2Boil 5 minutes; drain well.
  • 3Blend rice, ground round, egg, onion, garlic, parsley and nutmeg.
  • 4Form into small meatballs.
  • 5Add wine to broth; bring to boil.
  • 6Drop meatballs into hot broth, one at a time.
  • 7Bring to boil again; reduce heat.
  • 8Simmer 20 minutes.
  • 9Add salt and pepper.
  • 10Microwave: Add rice to 1 cup salted water.
  • 11Bring to a boil.
  • 12Hold 5 minutes; drain well.
  • 13Combine meatball ingredients as above.
  • 14Bring wine and broth to a boil.
  • 15Drop meatballs into hot broth, one at time.
  • 16Bring to a boil again.
  • 17Hold 10 minutes.
  • 18Add salt and pepper.
  • 19Crockpot: Make meatballs as above and simmer in crockpot on low for 2 hours.
