Ingredients
- 2 tablespoons rice
- 2 ounces ground round
- 1 tablespoon egg, beaten
- 1 tablespoon onion, grated
- 1/4 teaspoon garlic, minced
- 1/4 teaspoon parsley
- 1/4 teaspoon nutmeg
- 2 tablespoons dry red wine
- 1.25 cups beef broth
- - salt to taste
- - pepper to taste
How To Make french meatball soup

Step 1Stove Top: Add rice to 1 cup water.

Step 2Boil 5 minutes; drain well.

Step 3Blend rice, ground round, egg, onion, garlic, parsley and nutmeg.

Step 4Form into small meatballs.

Step 5Add wine to broth; bring to boil.

Step 6Drop meatballs into hot broth, one at a time.

Step 7Bring to boil again; reduce heat.

Step 8Simmer 20 minutes.

Step 9Add salt and pepper.

Step 10Microwave: Add rice to 1 cup salted water.

Step 11Bring to a boil.

Step 12Hold 5 minutes; drain well.

Step 13Combine meatball ingredients as above.

Step 14Bring wine and broth to a boil.

Step 15Drop meatballs into hot broth, one at time.

Step 16Bring to a boil again.

Step 17Hold 10 minutes.

Step 18Add salt and pepper.

Step 19Crockpot: Make meatballs as above and simmer in crockpot on low for 2 hours.
