Great for a crowd, or I even make these for just my husband and I .The best part about cooking for two? You have delicious leftovers for lunch, or to make a whole new meal. Shepherd's pie anyone? Would also make a great Super bowl Sunday main dish!

Ingredients For french dip stuffed baked potatoes

    beef chuck roast
  • 2 bag
    0nion soup mix
  • 4 c
    water
  • 6
    baking potatoes
  • 6 slice
    swiss or provolone cheese
  • 1 pinch
    salt and pepper

How To Make french dip stuffed baked potatoes

    Put 3-4 lb pot roast in crock pot Add 2 envelopes onion soup mix 4 cups of water Cook on low 7-8 hours Take 6 scrubbed baking potatoes ( I like russets), wrap in foil, and put in another crock pot, bake on low for 7-8 hours.( you can also bake potatoes in the oven for 2 hours at 400°, if you do not have a second cooker) When pot roast is done, shred meat into the broth.(don't throw out the delicious broth!) Cut open baked potatoes and give em a good squeeze. Salt and pepper to taste. Now pile that tender roast onto each baked potato. Top each with your favorite shredded cheese. (My man loves Provolone or Swiss) Now pour some of that delicious broth over the top of all to melt the cheese.
