Ingredients
- 1 pound ground beef
- 1 can tomato paste, 6 ounces
- 1/2 cup oatmeal, uncooked
- 3 tablespoons green pepper, finely chopped
- 2 tablespoons bran
- 2 tablespoons wheat germ
- 1 small onion, finely chopped
- 1 tablespoon fresh parsley, chopped
- 1 - egg, lighly beaten
- 1/4 teaspoon finely chopped garlic
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- - chili sauce
How To Make fluffy light meat loaf

Step 1Preheat oven to 350 degrees.

Step 2Combine all loaf ingredients, using your hands.

Step 3Form into loaf and place in 9x5x3\" loaf pan, cover with layer of chili sauce (or ketchup if desired), bake 50 minutes to 1 hour.

Step 4(Do not overbake, since part of the secret of fluffiness is shorter cooking time.)

Step 5Serve the meat loaf sliced and hot.

Step 6Variation: Half ground veal and half ground beef can be used for the meat loaf--lower in calories.
