Ingredients

  • 1 pound ground beef
  • 1 can tomato paste, 6 ounces
  • 1/2 cup oatmeal, uncooked
  • 3 tablespoons green pepper, finely chopped
  • 2 tablespoons bran
  • 2 tablespoons wheat germ
  • 1 small onion, finely chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 - egg, lighly beaten
  • 1/4 teaspoon finely chopped garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • - chili sauce

How To Make fluffy light meat loaf

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Combine all loaf ingredients, using your hands.
  • Step 3
    Form into loaf and place in 9x5x3\" loaf pan, cover with layer of chili sauce (or ketchup if desired), bake 50 minutes to 1 hour.
  • Step 4
    (Do not overbake, since part of the secret of fluffiness is shorter cooking time.)
  • Step 5
    Serve the meat loaf sliced and hot.
  • Step 6
    Variation: Half ground veal and half ground beef can be used for the meat loaf--lower in calories.
