tomato paste, 6 ounces
1/2 c
oatmeal, uncooked
3 Tbsp
green pepper, finely chopped
2 Tbsp
2 Tbsp
wheat germ
1 small
onion, finely chopped
1 Tbsp
fresh parsley, chopped
egg, lighly beaten
1/4 tsp
finely chopped garlic
1/2 tsp
1/4 tsp
freshly ground black pepper
chili sauce

How to Make Fluffy Light Meat Loaf


  • 1Preheat oven to 350 degrees.
  • 2Combine all loaf ingredients, using your hands.
  • 3Form into loaf and place in 9x5x3" loaf pan, cover with layer of chili sauce (or ketchup if desired), bake 50 minutes to 1 hour.
  • 4(Do not overbake, since part of the secret of fluffiness is shorter cooking time.)
  • 5Serve the meat loaf sliced and hot.
  • 6Variation: Half ground veal and half ground beef can be used for the meat loaf--lower in calories.
