I had never made or really eaten meatloaf until my husband and I got together. He is a real meat and potatoes man so I decided to find a recipe that would please him as well as satisfy my need for something a bit more healthy! I tweaked a recipe a few times and came up with this one; it has become a staple on our growing family's dinner table!

  • 1
    egg, beaten
  • 2/3 c
  • 2 slices
    whole grain bread, toasted and crumbled
  • 1 c
    shredded cheddar cheese
  • 1
    onion, finely chopped
  • 1
    carrot, shredded
  • 1
    zucchini, shredded
  • 1 tsp
  • 1/4 tsp
  • dash
    worcestershire sauce
  • 1 lb
    ground beef
  • 1/2 lb
    ground pork or ground lamb

  • 1/4 c
    packed brown sugar
  • 1/4 c
  • 1 Tbsp
    spicy mustard
  • 1 Tbsp
    worcestershire sauce

How to Make Flavorful Meatloaf


  1. Combine first 10 ingredients. Add meat and mix well.
  2. Press into loaf pan
  3. Combine sauce ingredients and spread over meatloaf
  4. Bake at 350 for 60-75 minutes or until internal temperature reads 160.
  5. Drain and let stand 10 minutes before slicing. Serve with mashed potatoes.
