flavorful meatloaf

I had never made or really eaten meatloaf until my husband and I got together. He is a real meat and potatoes man so I decided to find a recipe that would please him as well as satisfy my need for something a bit more healthy! I tweaked a recipe a few times and came up with this one; it has become a staple on our growing family's dinner table!

Ingredients
- MEATLOAF
- 1 - egg, beaten
- 2/3 cup milk
- 2 slices - whole grain bread, toasted and crumbled
- 1 cup shredded cheddar cheese
- 1 - onion, finely chopped
- 1 - carrot, shredded
- 1 - zucchini, shredded
- 1 teaspoon salt
- 1/4 teaspoon pepper
- dash - worcestershire sauce
- 1 pound ground beef
- 1/2 pound ground pork or ground lamb
- SAUCE
- 1/4 cup packed brown sugar
- 1/4 cup ketchup
- 1 tablespoon spicy mustard
- 1 tablespoon worcestershire sauce
How To Make flavorful meatloaf

Step 1Combine first 10 ingredients. Add meat and mix well.

Step 2Press into loaf pan

Step 3Combine sauce ingredients and spread over meatloaf

Step 4Bake at 350 for 60-75 minutes or until internal temperature reads 160.

Step 5Drain and let stand 10 minutes before slicing. Serve with mashed potatoes.
