With groceries getting more and more expensive, I find I am choosing the less tender cuts of beef and getting them tasty and tender!

Ingredients

  • 1/2 cup dark soy sauce
  • 1/2 cup rice wine vinegar
  • 1/4 cup chili oil
  • 1 jalapeno pepper, seeded and minced (leave some membranes and/or seeds if you prefer it hot)
  • 2 cloves garlic
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons fresh mint, chopped
  • 1 tablespoon fresh ginger, minced
  • 1 1/2 pounds flank steak

  • Step 1
    Combine the first 9 ingredients in a small bowl, stirring well. Place the steak in an 11 x 7 x 1 1/2 inch baking dish. Pour the marinade mixture over the steak. Cover and place in the refrigerator for 3 hours, flipping occasionally. (I flip every 30 minutes if I can) I have to admit I've taken this to work with me in a large Ziploc bag and flipped throughout the day!
  • Step 2
    Remove the steak from the marinade, reserving the marinade. Place the marinade in a small saucepan. Bring to a boil; reduce heat and simmer for 5 minutes. Set the marinade aside.
  • Step 3
    Place the steak on a rack in a broiler pan; broil 6 inches from the heat for 6 to 8 minutes on each side or to the desired degree of doneness. I go for 5 to 6 minutes per side, but my broiler runs hot.
  • Step 4
    To serve, slice the steak diagonally across the grain into thin slices. Serve with the reserved marinade. I like this with steamed veggies and rice.
