Offered as part of my Ground Beef Favorites Collection from First Ladies. This is purported to be the favorite chili of Mrs. Lyndon B. Jonhson, Wife of President of United States. I found these recipes in an old cookbook which has no name or any identifying labels.

Ingredients

  • 4 pounds chili meat (coarsely ground round steak or well trimmed chuck meat)
  • 1 large onion (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon ground oregano
  • 1 teaspoon comino seed
  • 6 teaspoons chili powder
  • 2 cans ro-tel tomatoes
  • - salt to tsate
  • 2 cups hot water

How To Make first ladies /pedernales river chili

  • Step 1
    Place chili meat, onions, and cloves of garlic in a large heavy boiler or skillet. Fry meat mixture until lightly brown in color. Season with ground oregano, comino seed, chili powder, Ro-tel tomatoes, salt to taste, and hot water.
  • Step 2
    Bring mixture to a boil. Lower cooking temperature and simmer slowly for about 1 hour, or until chili is as thick as desired.
  • Step 3
    While chili simmers, skim fat from top of chili mixture as necessary.
