Unique sauce with a great taste. Pairing it with the filet and asparagus is delicious. The sauce can not be refrigerated and rewarmed because it will separate.

Ingredients
- FOR THE SOY-GINGER BUTTER SAUCE
- 1/4 cup rice vinegar
- 1/4 cup mirin
- 4 tablespoons soy sauce
- 2 cloves garlic minced
- 1 tablespoon grated ginger
- 5 tablespoons cold butter
- juice of 1/2 lime
- FOR THE STEAK AND ASPARAGUS
- 2 filet mignon
- 1 bunch asparagus trimmed
How To Make filet mignon & asparagus w soy-ginger butter sauce

Step 1For the butter sauce In a small saucepan add the vinegar and mirin. Add 2 tbsp soy sauce and the ginger and garlic.

Step 2Bring to a boil and reduce to about 2 tbsp. Add the remaining 2 tbsp of soy sauce and reduce to about 3 tbsp. Add the butter and whisk until the butter is melted and incorporated into a sauce. Add the lime juice and stir. Strain through and fine mesh strainer.Set aside and keep warm.

Step 3Bring a pan of salted water to a boil. Add the asparagus and boil 3 minutes. Drain

Step 4Sear the filet in a little oil until desired doneness. Serve the sauce over the asparagus and filet
