Ingredients

  • 1 1/2 pounds lean ground beef
  • 3/4 cup unseasoned dry bread crumbs
  • 1 egg, beaten
  • 1 can 4-oz can chopped green chilies, drained
  • 1/2 cup cheddar cheese, shredded
  • 1 package taco seasoning packet 1.25 oz.
  • 1 medium tomato, chopped
  • 1/2 cup green onions, chopped
  • 2 tablespoons ketchup
  • 1 tablespoon salsa
  • 1/2 teaspoon seasoned salt

How To Make fiesta meatloaf

  • Step 1
    In a large bowl or food processor, combine ground beef, bread crumbs, egg, chiles, cheddar cheese, and taco seasoning. Blend well, but do not over mix.
  • Step 2
    Pat meat into a loaf pan and bake in a 350 degree oven for approximately 1 hour or until meat is cooked through. Remove and let stand 10 minutes.
  • Step 3
    In a small bowl, combine remaining ingredients. Slice meatloaf into slices and spoon tomato mixture over slices.
  • Step 4
    Note: If using packaged taco seasoning, you may want to lessen the amount of salt in the topping.
