Ingredients
- 1 1/2 pounds lean ground beef
- 3/4 cup unseasoned dry bread crumbs
- 1 egg, beaten
- 1 can 4-oz can chopped green chilies, drained
- 1/2 cup cheddar cheese, shredded
- 1 package taco seasoning packet 1.25 oz.
- 1 medium tomato, chopped
- 1/2 cup green onions, chopped
- 2 tablespoons ketchup
- 1 tablespoon salsa
- 1/2 teaspoon seasoned salt
How To Make fiesta meatloaf

Step 1In a large bowl or food processor, combine ground beef, bread crumbs, egg, chiles, cheddar cheese, and taco seasoning. Blend well, but do not over mix.

Step 2Pat meat into a loaf pan and bake in a 350 degree oven for approximately 1 hour or until meat is cooked through. Remove and let stand 10 minutes.

Step 3In a small bowl, combine remaining ingredients. Slice meatloaf into slices and spoon tomato mixture over slices.

Step 4Note: If using packaged taco seasoning, you may want to lessen the amount of salt in the topping.
