Ingredients
- 1-1/2 to 2 pounds stew meat, cut into cubes
- 5 tablespoons flour
- 4-5 red potatoes, (2-1/2 to 3 inch), quartered
- 2 - carrots, peeled and chopped into 1 to 2 inch pieces
- 1 jar (12 ounces) beef gravy
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 onion, sliced

Step 1On waxed paper, sprinkle with 2 tbsps. flour, 2 tsp. salt and 1/2 tsp. pepper; toss to coat in 10 inch skillet, heat about 1 tbsp. oil over medium high heat. Add coated beef; cook and stir 4 to 6 minutes. ..

Step 2Layer carrots, potatoes, and onion. Add browned beef, sprinkle with any remaining flour mixture. Top with gravy and tomatoes. Cover, cook on low heat 8 to 10 hours.

Step 3Before serving, in a small bowl, blend 3 remaining tbsps. flour with 1/4 cup of cold water. Stir into stew. Increase heat to high; cover and cook 10 minutes longer or until thickened.
