Farmers Chili

Ingredients

2 lbbeef stew meat, cubed into bit size pieces

2 can(s)light red kidney beans, 15 ounces each

1 can(s)black beans
-
2 can(s)rotel
-
1 can(s)petite diced tomatoes
-
1 qttomatoe juice
-
1 mediumonion, chopped
-
2 Tbspfresh cilantro, minced

·salt and pepper, to taste
How to Make Farmers Chili
- In a large stockpot, combine all ingredients and cover with enough water to make a soup. Bring to a boil over high heat, stirring occasionally. Reduce heat to low and simmer chili for about 2 hours, stirring occasionally.
- Serve with fresh salsa (see Speedy Salsa recipe) and Farmer's Cornbread (see recipe) or tortilla chips.
