fajita quesadillas

Found this in one of my cookbooks and thought I'd share.

Ingredients

  • 1 package large flour tortillas
  • 1 pound velveeta cheese, shredded
  • 1 pound fajita meat
  • 1 - onion, chopped
  • 1 pound cheddar cheese, shredded
  • 1 can rotel tomatoes
  • 1 - green pepper, chopped

How To Make fajita quesadillas

  • Step 1
    Shredd Velveeta and Cheddar cheese and set aside.
  • Step 2
    Put alittle shortening in the bottom of a large skillet, then place the flour tortilla in the skillet on low heat.
  • Step 3
    On half of the tortilla, put about 1/2 cup of meat, then spread shredded cheeses, then add about 2 Tbsp. of the Rotel tomatoes.
  • Step 4
    Fold tortilla over like an omelet. Let it get hot enough to melt cheese. Allow tortilla to get golden brown. Flip over. Cut into slices like pizza.
