Was going to make spaghetti for dinner tonight and had all the ingredients EXCEPT THE PASTA! Found this risotto recipe on a Betty Crocker site, pinched and tweaked a bit, and made this instead. Turned out great!

Ingredients

  • 1 lb
    ground beef
  • 1/2 c
    chopped onion
  • 1 clove
    garlic, chopped fine
  • 1/2 tsp
    pepper
  • 1 c
    arborio rice
  • 3 c
    beef broth
  • 1/2 c
    shredded carrot
  • 3/4 c
    parmesan cheese
  • 3 Tbsp
    green onions, chopped

How to Make EZ Hamburger Risotto

Step-by-Step

  1. Cook meat, onion, garlic and pepper in small amount of olive oil over medium-high heat until meat is brown and onion is soft.
  2. Stir in rice, cook for 2 or 3 minutes.
  3. Stir in broth. Heat to boiling, reduce heat to medium low, cover and simmer 10 minutes.
  4. Stir in carrots. Cook uncovered, stirring occasionally, until liquid is absorbed (8-10 min?).
    Remove from heat.
  5. Stir in cheese. Cover, let stand for a few minutes.
  6. Sprinkle with green onions, and serve in bowls.
