ez hamburger risotto

Was going to make spaghetti for dinner tonight and had all the ingredients EXCEPT THE PASTA! Found this risotto recipe on a Betty Crocker site, pinched and tweaked a bit, and made this instead. Turned out great!

Ingredients

  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1 clove garlic, chopped fine
  • 1/2 teaspoon pepper
  • 1 cup arborio rice
  • 3 cups beef broth
  • 1/2 cup shredded carrot
  • 3/4 cup parmesan cheese
  • 3 tablespoons green onions, chopped

How To Make ez hamburger risotto

  • Step 1
    Cook meat, onion, garlic and pepper in small amount of olive oil over medium-high heat until meat is brown and onion is soft.
  • Step 2
    Stir in rice, cook for 2 or 3 minutes.
  • Step 3
    Stir in broth. Heat to boiling, reduce heat to medium low, cover and simmer 10 minutes.
  • Step 4
    Stir in carrots. Cook uncovered, stirring occasionally, until liquid is absorbed (8-10 min?). Remove from heat.
  • Step 5
    Stir in cheese. Cover, let stand for a few minutes.
  • Step 6
    Sprinkle with green onions, and serve in bowls.
