ez hamburger risotto
Was going to make spaghetti for dinner tonight and had all the ingredients EXCEPT THE PASTA! Found this risotto recipe on a Betty Crocker site, pinched and tweaked a bit, and made this instead. Turned out great!

Ingredients
- 1 pound ground beef
- 1/2 cup chopped onion
- 1 clove garlic, chopped fine
- 1/2 teaspoon pepper
- 1 cup arborio rice
- 3 cups beef broth
- 1/2 cup shredded carrot
- 3/4 cup parmesan cheese
- 3 tablespoons green onions, chopped
How To Make ez hamburger risotto

Step 1Cook meat, onion, garlic and pepper in small amount of olive oil over medium-high heat until meat is brown and onion is soft.

Step 2Stir in rice, cook for 2 or 3 minutes.

Step 3Stir in broth. Heat to boiling, reduce heat to medium low, cover and simmer 10 minutes.

Step 4Stir in carrots. Cook uncovered, stirring occasionally, until liquid is absorbed (8-10 min?). Remove from heat.

Step 5Stir in cheese. Cover, let stand for a few minutes.

Step 6Sprinkle with green onions, and serve in bowls.
