EZ Hamburger Risotto

Was going to make spaghetti for dinner tonight and had all the ingredients EXCEPT THE PASTA! Found this risotto recipe on a Betty Crocker site, pinched and tweaked a bit, and made this instead. Turned out great!

Stove Top


1 lb
ground beef
1/2 c
chopped onion
1 clove
garlic, chopped fine
1/2 tsp
1 c
arborio rice
3 c
beef broth
1/2 c
shredded carrot
3/4 c
parmesan cheese
3 Tbsp
green onions, chopped


1Cook meat, onion, garlic and pepper in small amount of olive oil over medium-high heat until meat is brown and onion is soft.
2Stir in rice, cook for 2 or 3 minutes.
3Stir in broth. Heat to boiling, reduce heat to medium low, cover and simmer 10 minutes.
4Stir in carrots. Cook uncovered, stirring occasionally, until liquid is absorbed (8-10 min?).
Remove from heat.
5Stir in cheese. Cover, let stand for a few minutes.
6Sprinkle with green onions, and serve in bowls.
