My kids never cared for meat loaf so one day I desided to go out on a limb and try one of my own makings. They loved it and so has everyone who has made and tried it.

Ingredients

  • 1 1/2 pounds ground beef
  • ½ pound ground pork sausage
  • 1 cup dry cornbread stuffing mix
  • ½ medium onion, chopped fine
  • 1 can rotel tomatoes, original type
  • GLAZE
  • ½ cup ketchup
  • 4 tablespoons brown sugar, packed
  • 4 teaspoons white vinegar

How To Make evelyn's meat loaf

  • Step 1
    Mix all meat loaf ingredients -- Shape in a loaf pan. Bake at 375º until done , about 1 hour...
  • Step 2
    GLAZE: Mix all glaze ingredients in a small sauce pan. Brush about ½ on top of meat loaf after 15 minutes in the oven. Simmer remaining mixture. Spread on meat loaf the last 15 minutes or so before removing from oven.
  • Step 3
    NNOTE: This meat loaf has a lot of drippings because of the pork in it. Cook on rack if possible, if not, dump drippings from it several times while baking.
