My kids never cared for meat loaf so one day I desided to go out on a limb and try one of my own makings. They loved it and so has everyone who has made and tried it.

Ingredients
- 1 1/2 pounds ground beef
- ½ pound ground pork sausage
- 1 cup dry cornbread stuffing mix
- ½ medium onion, chopped fine
- 1 can rotel tomatoes, original type
- GLAZE
- ½ cup ketchup
- 4 tablespoons brown sugar, packed
- 4 teaspoons white vinegar

Step 1Mix all meat loaf ingredients -- Shape in a loaf pan. Bake at 375º until done , about 1 hour...

Step 2GLAZE: Mix all glaze ingredients in a small sauce pan. Brush about ½ on top of meat loaf after 15 minutes in the oven. Simmer remaining mixture. Spread on meat loaf the last 15 minutes or so before removing from oven.

Step 3NNOTE: This meat loaf has a lot of drippings because of the pork in it. Cook on rack if possible, if not, dump drippings from it several times while baking.
