My Mother showed me how to make these back in the 70's. This is one of my boys favorite recipe. I make these once a month.

Ingredients
- 1 pound ground beef
- 1 - onion chopped
- 1 package flour tortillas 20 in pkg
- 3 cans enchilada sauce mild
- 1 package grated colby monterey jack cheese
How To Make enchilidas

Step 1Brown ground beef and onion in fry pan. Drain fat .

Step 2Open enchilida sauce and heat in a smaller fry pan. Grab a cookie sheet dip flour tortillas in sauce place one at a time on cookie sheet. with slotted spoon scoop ground beef mixture inside tortilla a grated cheese and roll up. repeat .till all tortillas are on pan .

Step 3pour left over sauce on enchillidas and sprinkle with cheese. pre heat oven to 350 heat in oven until cheese is melted. 5-10 minutes.
