This is a great dish and pretty simple to make. Now the reason I put down the servings as 8-12 is it all depends on how many of those filled tortillas will fit into a baking dish. I usually end up with about 7 or 8.

Ingredients

  • 1 pound beef
  • 2 tablespoons olive oil
  • 1 medium onion (chopped)
  • 1 can enchilada sauce
  • 8-12 - flour tortillas
  • 3 cups grated monterey jack cheese
  • 1 can sliced black olives
  • - cilantro

How To Make enchiladas

  • Step 1
    Brown beef in oil with the onion and olives. Add about 1/2 of the can of enchilada sauce.
  • Step 2
    Pour remaining enchilada sauce into a 9 x 12 baking dish. (this allows the enchiladas not to stick on the dish and gives you that great enchilada flavor)
  • Step 3
    Preheat oven to 350 Degrees F
  • Step 4
    Spoon about 3 tablespoons of filling into each tortilla sprinkle on some cheese and fold (kinda like a burrito) Then place into baking dish
  • Step 5
    Sprinkle remaining cheese and cilantro (to taste) onto enchiladas
  • Step 6
    Bake for 25 - 30 minutes or until heated through.
