This is a great dish and pretty simple to make. Now the reason I put down the servings as 8-12 is it all depends on how many of those filled tortillas will fit into a baking dish. I usually end up with about 7 or 8.

  • 1 lb
  • 2 Tbsp
    olive oil
  • 1 medium
    onion (chopped)
  • 1 can(s)
    enchilada sauce
  • 8-12
    flour tortillas
  • 3 c
    grated monterey jack cheese
  • 1 can(s)
    sliced black olives

How to Make Enchiladas


  1. Brown beef in oil with the onion and olives. Add about 1/2 of the can of enchilada sauce.
  2. Pour remaining enchilada sauce into a 9 x 12 baking dish. (this allows the enchiladas not to stick on the dish and gives you that great enchilada flavor)
  3. Preheat oven to 350 Degrees F
  4. Spoon about 3 tablespoons of filling into each tortilla sprinkle on some cheese and fold (kinda like a burrito) Then place into baking dish
  5. Sprinkle remaining cheese and cilantro (to taste) onto enchiladas
  6. Bake for 25 - 30 minutes or until heated through.
