This is a great dish and pretty simple to make. Now the reason I put down the servings as 8-12 is it all depends on how many of those filled tortillas will fit into a baking dish. I usually end up with about 7 or 8.

Ingredients
- 1 pound beef
- 2 tablespoons olive oil
- 1 medium onion (chopped)
- 1 can enchilada sauce
- 8-12 - flour tortillas
- 3 cups grated monterey jack cheese
- 1 can sliced black olives
- - cilantro
How To Make enchiladas

Step 1Brown beef in oil with the onion and olives. Add about 1/2 of the can of enchilada sauce.

Step 2Pour remaining enchilada sauce into a 9 x 12 baking dish. (this allows the enchiladas not to stick on the dish and gives you that great enchilada flavor)

Step 3Preheat oven to 350 Degrees F

Step 4Spoon about 3 tablespoons of filling into each tortilla sprinkle on some cheese and fold (kinda like a burrito) Then place into baking dish

Step 5Sprinkle remaining cheese and cilantro (to taste) onto enchiladas

Step 6Bake for 25 - 30 minutes or until heated through.
