Ingredients

  • 1-2 pound hamburger
  • 1-2 pound cheese, shredded cheddar and mozzerella
  • 1 package enchilada seasoning dry mix
  • 1 can 28 ounce tomato sauce
  • 1 1/2 cups water
  • 1 - green pepper, chopped as desired
  • 1 - onion, chopped as desired
  • 1 can diced tomatoes as desired
  • 1 package tortillas, flour (package of 10) large diameter
  • GARNISH
  • - shredded lettuce
  • - diced, fresh tomatoes
  • - sour cream
  • - guacamole
  • - ripe olives, sliced

How To Make enchiladas

  • Step 1
    Brown hamburger, chopped onion, peppers if using. Drain
  • Step 2
    Mix in enchilada dry mix, tomato sauce, water stir well and bring to a boil. Reduce heat and simmer 5 minutes. Simmer until veggies are tender ( if you add them to the sauce).
  • Step 3
    Pour half of sauce into 9x13 baking dish and sprinkle half of the cheese on top of the sauce.
  • Step 4
    Spoon meat sauce on tortilla, roll up and place in pan on top of sauce and cheese. Repeat with all tortilla's until all used.
  • Step 5
    Pour remaining sauce and sprinkle cheese on top. Bake at 350 degrees for 20 minutes or until bubbly. Serve with garnishes as desired.
