Another recipe taken from our church's cookbook (and from the Cookie Queen). Authentic? Not very, not really. Hearty and delicious? YES!

Ingredients

  • SAUCE:
  • 1 can tomato sauce
  • 1 can enchilada sauce
  • ENCHILADAS:
  • 1 pound ground beef
  • 1/2 teaspoon salt
  • 1/2 pound cheddar cheese (reserve 1 cup)
  • 1/4 cup onions, chopped
  • 6 - tortillas

How To Make enchiladas

  • Step 1
    Combine tomato sauce and enchilada sauce in medium bowl.
  • Step 2
    Brown ground beef; drain. Add salt, cheese, and onions.
  • Step 3
    Dip tortillas in sauce. Add meat and roll. Lay folded side down in square casserole dish.
  • Step 4
    Pour 1 cup of sauce and 1 cup of cheese over enchiladas. Bake at 350*F for 20 minutes.
