Ingredients

  • 1 Tbsp
    shortening
  • 1 Tbsp
    flour
  • 2 Tbsp
    chili powder
  • 2 c
    water
  • ·
    corn tortillas
  • 2 lb
    ground beef
  • 1 small
    onion
  • 1 large
    avocado, chopped
  • ·
    cheese, grated

How to Make Enchiladas

Step-by-Step

  1. ENCHILADAS:
  2. To make sauce, melt shortening in skillet.
  3. Add flour; mix well.
  4. Stir in chili powder and water.
  5. Bring to boil, cooking and stirring until thickened.
  6. (Should be thick enough for dipping corn tortillas.)
  7. FILLING:
  8. Cook ground beef until brown.
  9. Add diced onion, avocado and salt; mix thoroughly.
  10. Dip corn tortillas in sauce.
  11. Fill with meat mixture and lots of cheese.
  12. Roll and serve piping hot.
