Ingredients

  • 1 tablespoon shortening
  • 1 tablespoon flour
  • 2 tablespoons chili powder
  • 2 cups water
  • - corn tortillas
  • 2 pounds ground beef
  • 1 small onion
  • 1 large avocado, chopped
  • - cheese, grated

How To Make enchiladas

  • Step 1
    ENCHILADAS:
  • Step 2
    To make sauce, melt shortening in skillet.
  • Step 3
    Add flour; mix well.
  • Step 4
    Stir in chili powder and water.
  • Step 5
    Bring to boil, cooking and stirring until thickened.
  • Step 6
    (Should be thick enough for dipping corn tortillas.)
  • Step 7
    FILLING:
  • Step 8
    Cook ground beef until brown.
  • Step 9
    Add diced onion, avocado and salt; mix thoroughly.
  • Step 10
    Dip corn tortillas in sauce.
  • Step 11
    Fill with meat mixture and lots of cheese.
  • Step 12
    Roll and serve piping hot.
