Ingredients

1 Tbsp
shortening
1 Tbsp
flour
2 Tbsp
chili powder
2 c
water
corn tortillas
2 lb
ground beef
1 small
onion
1 large
avocado, chopped
cheese, grated

How to Make Enchiladas

Step-by-Step

  • 1ENCHILADAS:
  • 2To make sauce, melt shortening in skillet.
  • 3Add flour; mix well.
  • 4Stir in chili powder and water.
  • 5Bring to boil, cooking and stirring until thickened.
  • 6(Should be thick enough for dipping corn tortillas.)
  • 7FILLING:
  • 8Cook ground beef until brown.
  • 9Add diced onion, avocado and salt; mix thoroughly.
  • 10Dip corn tortillas in sauce.
  • 11Fill with meat mixture and lots of cheese.
  • 12Roll and serve piping hot.
