ground beef
1 medium
onion, chopped
1 can(s)
16-oz cream of mushroom soup
1 can(s)
16-oz chicken broth
1 can(s)
16-oz enchilada sauce
1 pkg
corn tortillas, cut in fourths
3-4 c
sharp cheddar cheese, shredded
1 can(s)
chopped black olives (optional)
chili pepper to taste (optional)

How to Make Enchilada Casserole

Step-by-Step

  • 1Brown ground beef and onions in large skillet until done. Add cream of mushroom soup, chicken broth, enchilada sauce and chili pepper (if used) and simmer for 30 minutes.

    In a 9x13 casserole dish layer half of the tortilla pieces, meat sauce, cheese and repeat. Top with chopped black olives if desired.

    Bake at 350 degrees for 45-50 minutes
