Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 1 can 16-oz cream of mushroom soup
- 1 can 16-oz chicken broth
- 1 can 16-oz enchilada sauce
- 1 package corn tortillas, cut in fourths
- 3-4 cups sharp cheddar cheese, shredded
- 1 can chopped black olives (optional)
- - chili pepper to taste (optional)
How To Make enchilada casserole

Step 1Brown ground beef and onions in large skillet until done. Add cream of mushroom soup, chicken broth, enchilada sauce and chili pepper (if used) and simmer for 30 minutes. In a 9x13 casserole dish layer half of the tortilla pieces, meat sauce, cheese and repeat. Top with chopped black olives if desired. Bake at 350 degrees for 45-50 minutes
