My kids begged for me to make this tonight..I had all the ingredients, and we have had our fill of turkey. This is so good. Add to or take from what you may not like. Enjoy!!

Ingredients

  • 1 - small package soft corn tortillas ( about 20 - 25 )
  • 1 pound ground beef
  • 1/2 cup water
  • 1 tablespoon dry, minced onions
  • 1 teaspoon salt
  • 3 teaspoons chili powder
  • 1 1/2 teaspoons ground cumin
  • 2 cups mexican mix, shredded cheese, or cheddar
  • 1 small can of green chiles (4oz)
  • 1 small can refried beans ( optional) i didn't use
  • 1 small can of sliced ripe olives (4 oz)
  • 1/4 cup sour cream
  • ENCHILADA SAUCE
  • 1 - small can ( 6 oz) tomato paste
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 2 cups water

How To Make enchilada casserole, cass's

  • Step 1
    Enchilada sauce: Mix all ingredients in a small saucepan, stirring well. Simmer for 15 minutes; stirring occasionally, set aside.
  • Step 2
    Gather ingredients. Preheat oven to 350 degree. Spray a 13 x 9 baking dish with cooking spray.
  • Step 3
    Cut tortilla's into triangles. You don't have to do this, just is easier to cut through and serve.
  • Step 4
    In a medium skillet, brown ground beef till no longer pink; drain. Return to skillet. Add the seasonings and water, simmer for about 10 minutes. After simmering; add sour cream, green chiles, olives and beans if using, stir. Heat through, set aside
  • Step 5
    Now, place two layers of soft corn tortillas; cover with a little of the enchilada sauce. Space large spoonfuls of the meat filling 2" apart on top of the sauce, and sprinkle with 1/2 the cheese.
  • Step 6
    Top with another double layer of soft corn tortillas. Ladle some more sauce over the soft tortilla's, then repeat with the meat and end with remaining cheese.
  • Step 7
    Bake in a preheated 350 oven for about 40 - 45 minutes; or until browning and bubbly. Serve with sour cream, green onions or whatever you prefer.
  • Step 8
    You can make this early in the day and then just pop it into the oven at dinner time. If you do that, add about 10 minutes to the baking time.
