Ingredients

  • 1 pound lean ground beef
  • 1 large chopped onion
  • 2 cups thick bottled salsa
  • 1 can 15 oz black beans, drained and rinsed
  • 1/4 cup reduced-fat italian salad dressing
  • 2 tablespoons taco seasoning mix
  • 1/4 teaspoon ground cumin
  • 6 - flour tortillas (8 in) or corn tortillas
  • 3/4 cup reduced-fat sour cream (not necessary)
  • 1 cup shredded cheese (mexican blend is good)

How To Make enchilada casserole

  • Step 1
    In large skillet, cook hamburger, onion until meat is no longer pink. Drain. Stir in salsa, beans, dressing, taco seasoning, cumin. Place three tortillas in 2-qt. baking dish coated with cooking spray. Layer with half of meat mixture, sour cream (opt.) and cheese. Repeat layers.
  • Step 2
    Cover and bake at 400 degrees for 25 min. Uncover; bake 5-10 min. longer or until heated through. Let stand 5 min before serving. Top with lettuce, tomato and cilantro if you want to pretty it up.
