    1 lb. ground hamburger
  • ·
    6-8 corn tortillas
  • ·
    1 package taco seasoning
  • ·
    20 oz. can enchilada sauce
  • ·
    8 oz. can tomato sauce
  • ·
    1 can refried beans
  • ·
    grated cheddar cheese

How to Make Enchilada Casserole


  1. Brown hamburger with taco seasoning.
  2. Take small sauce pan and add refried beans, half enchilada sauce, half tomato sauce. Mix.
  3. In pan with hamburger, add half enchilada sauce, half tomato sauce. Mix.
  4. Line bottom with cut-up corn tortillas, then layer of meat mixture, layer of bean mixture, layer of cheese, repeat tortilla, meat, and bean layers.
  5. For topping, cut-up corn tortilla and lay on top. Sprinkle with cheese.
  6. Bake @ 375 for 30 minutes.
