I tried this recipe quite a while ago so I can't really remember what it was like I do know that it was good :)

Ingredients For enchilada casserole

  • 1 1/2 lb
    ground beef
  • 1 md
    onion, chopped
  • 1 pkg
    taco seasoning
  • 12
    soft tortillas, cut up
  • 2 can
    16 oz each ranch style beans
  • 8 oz
    shredded cheddar cheese
  • 1 can
    10.5 oz cream of mushroom soup
  • 1 can
    10 oz diced tomatoes with chilies

How To Make enchilada casserole

  • 1
    Brown beef with onions. Drain and add taco seasoning. Place 1/2 tortilla pieces in a 9x13 inch pan. Cover with beans, including their liquid; follow with layers of meat mixture, cheese, remaining tortilla pieces, soup and tomatoes.

    Bake 45-50 minutes in a 400* Oven until heated through and cheese is melted.
